I was never a vegetable fan... until I stopped over cooking them. LOL

I've been experienting with spagetti squash, acorn squash, and butternut squash.

My daughter is experimenting with juicing vegetables.

For years I would never eat carrots... unless raw. My mother and grandmother cooked them till they were soft... never liked them. I recently went to a restaurant that lightly stir fried them and they were delicious.

Any vegetable stories out there? LOL

I am a huge vegetable fan and have been since childhood. The only vegetable I don't enjoy is brussel sprouts. Everything else I love and eat often. I cook spinach several times per week in addition to green beans, broccoli, squash. I like to get organic but the organic section does not always have the best looking produce at my primary market. There is a Whole Foods, but, it is further from my house and not as convenient to get to. During season, the Farmers Market is always a good option.

I recently fell in love with artichoke hearts. They are so tasty and add spark to any dish. I haven't tried them fresh yet, I just get them canned or jarred. I don't know how to peel it. Any tips on that?

I just recently tried fresh artichokes. After washing... I cut the pointy points off with a kitchen scissor... then I steamed them for about 8 minutes... then spray a little olive oil on it.

I love getting stuffed artichokes in a restaurant, but I have not tried making it at home.

When I eat the artichoke... I snap off each leaf... one at a time, and with my teeth I pull through. Then when I finish playing with the leafs I cut the artichoke heart out. LOL Hope this helps.

Anyone else with a good recipe?
